Refurbishment Process

Many foeders that leave the old cellars of Europe have been in use for quite some time. The flavor profiles run deep into the wood and often times the tank must undergo a refurbishment process to bring it back to life and become usable again.

We work with several cooperages who have mastered this process. Each foeder typically gets a full exterior sanding, new head, staves replaced (if necessary), and all new stainless hardware. They are then sealed, swelled, and pressure tested prior to shipment to ensure fillability.

Our Foeders & Tanks

Red & White Wine

Our red and white wine foeders arrive freshly emptied and fully refurbished from a renowned winery in the Palatinate or "Pfalz" wine region of Germany. These oval and round wine foeders typically range in size from 9HL to 30HL or more. Each foeder includes: SS Tasting Port, Full Draining Valve (50mm), Detachable Racking Valve (50mm), and SS Front Manway w/ Triclamp (500mm).




The Pfalz Wine Region

As the second largest wine-growing region in Germany, Pfalz's 23,684 hectares of vineyards sweep across a serene landscape of more than 35 miles (85 kilometers) long. The main focus of the winegrowers in this region is on classic grape varieties, especially Riesling. Known as “the king of white wines”, Riesling has become the undisputed leader in the Pfalz with nearly 6,000 hectares cultivated.

While Riesling plays a dominant role throughout the Pfalz, almost 40% of its southern region is planted with red vines; thus making the Pfalz Germany’s largest red wine region. Pinot Noir (Spätburgunder) is one its most widely planted red wine grapes. Now highly regarded for its red wines, each year vintners in the Pfalz are among the recipients of the German Red Wine Prize.


Cognac

Our Cognac tanks arrive freshly emptied and fully refurbished from various small cellars around the Cognac region of France. These Tronconical tanks typically range in size from 10HL to 60HL or more. Each Cognac tank includes: SS Tasting Tap, Full Draining Valve (50mm), Detachable Racking Valve (50mm), and SS Top Manway w/ Triclamp (500mm). All stainless steel fittings are from France.

Cognac is a French brandy that is comprised of white wine grape varietals. It must be made in the Cognac region of France, distilled twice in copper pot stills, and aged in French oak barrels, Limousin or Tronçais, for a minimum of two years. However, most Cognacs spend considerably more time maturing in barrels than the minimum legal requirement. Cognac flavors can range from notes of fruit, spice, flowery or herbal, and rancio, which helps to describe the sweet yet nutty flavor derived from the oak aging.
