53 Gal Sotol Barrels
Sotol is a spirit made from a desert succulent from the Dasylirion Wheeliri family. The plant is grown and cultivated in the wild deserts of Southern Texas. Similar to tequila, the pina of the plant is harvested, roasted, fermented and distilled. It is then sometimes laid to rest in new, charred American Oak Barrels.
These Sotol barrels are charred, new American oak barrels that aged sotol produced from 100% wild grown Dasylirion Wheeliri for 1 year. The flavor profile is similar to mezcal with aromas of earth, herbs and citrus.
